This recipe was one of those unintentional surprises! I was hungry and wanted to make avocado toast but wanted to make it special so I took a look at the ingredients I had and decided to fry up and egg and throw the feta on top. Then Avocado Toast with Fried Egg and Feta was born! It was incredible! The feta gave it an extra pop that made it very hard to just inhale this. If you like trying new flavors, you should give this a go. It’s perfect for a healthy breakfast or a late night snack! If you have trouble finding feta, you can get some here.
Ingredients:
1 piece of bread
2 tablespoons olive oil
1 egg
Salt and pepper
1/2 ripe avocado
2 tablespoons crumbled feta
Instructions:
1) Toast piece of bread and set aside. In a small bowl, mash the avocado with the salt and pepper. Spread over the toast.
2) In a large skillet, heat the oil on medium-high heat. Crack the egg into the oil and fry for 2-3 minutes. Add some more salt and pepper. Carefully scoop the hot oil over the egg yolk to cook the top. Slowly slide on top of the avocado.
3) Top with the feta and serve immediately. Drizzle with ketchup or Sriracha if you choose.
