Sun dried tomatoes are a heavy hitter in the summer. There are tons of recipes out for them right now and tons of ways to enjoy them. But sometimes you have trouble finding them or don’t want to spend the money on a jar at the store. The good news is you can make your own version at home! These come out delicious and I was able to get them to the exact dryness I wanted. Cilantro Lime Cauliflower Rice

As delicious as carbs are, sometimes you need to cut them out. I’m all for moderation so I would never tell you to give up those amazing carbs but if you are looking for a way to get away from the carbs for awhile then this recipe for Cilantro Lime Cauliflower Rice is perfect. I used a bag of pre-made rice that I bought. You can find already made rice here. However, if you want to make your own it is very easy. Just take one large cauliflower and break it into florets. Rinse them well and pat dry. Then place them into a food processor and pulse until it’s the consistency of rice. Then you are ready to go! Vegetarian Stuffed Peppers

Eating healthy can get very boring sometimes because you feel like you are in a rut  with options but luckily these Vegetarian Stuffed Peppers are not only great for you, they are delicious! I used my Spicy Bean and Corn Salad as the filling for this and it worked perfectly! If you have another version you like, feel free to use that one. This is also full of brown rice so you have tons of healthy carbs. This is a great way to eat healthy! Easy Peel Hard Boiled Eggs

Hard boiled eggs are a food item with many different uses. It’s an easy way to get protein in the morning, they are huge on Easter and they are a vital ingredient on a Cobb salad! They are also the main star of egg salad and of course, a party favorite, deviled eggs! Spicy Bean and Corn Salad

There are a few really great things about this Spicy Black Bean and Corn Salad! First of all, it’s insanely easy to make so you don’t have to worry about standing in front of the stove. Next, it’s full of fiber so it’s very healthy for you. My husband makes a big batch of this to eat throughout the week when he’s meal planning. Finally, it’s gluten-free and vegan! This is a great beginner recipe if you are just starting out on a new diet plan.
