Chicken, Bacon and Avocado Salad

Chicken, Bacon and Avocado Salad

Now that it’s summer, a great salad is much appreciated! Now you can chop up some tomatoes and cucumbers and throw them on some lettuce or you can make. a. salad! This is delicious and hearty, which means you won’t feel hungry an hour later! Plus it’s full of protein and veggies so it is amazing for you too! I loved this salad but my only complaint was it didn’t last very long! We went through it pretty quick because not only was it so delicious, it also goes well with a variety of dressings. I’m a creamy fan (thousand island, ranch, blue cheese, etc) and my husband is an Italian dressing guy so knowing that it was equally delicious made it even better! Even better, you can double up on the marinade and use that for an awesome honey mustard dressing on top! Continue reading “Chicken, Bacon and Avocado Salad”

Chili with Cornbread Crust

Chili with Cornbread Crust-2

I love chili. It’s so easy and so fulfilling. One of the best things to go with chili…..cornbread. Now you can just make an awesome batch of cornbread and have it with a nice bowl of chili but you can also try this. This recipe mixes the best of both worlds. I used some leftover Chicken Chili as the base and used the recipe below as the crust. If you have a go to chili recipe, feel free to use it. The best part of this is the ramekins make them like little individual servings so it works out perfectly. If you want to go a little healthier, I also have a Turkey and Sweet Potato Chili that you can try.  Continue reading “Chili with Cornbread Crust”

Ham Bone Soup

There’s nothing like a baked ham. It smells amazing and the leftovers last forever! But if you are the thrifty type, it kills you to throw away the ham bone when it still has huge hunks of ham on it. This recipe is for you! It slow cooks so every last bit of that ham gets put to good use, and mixed with all the other ingredients…..lets just say that you will have a happy tummy!  Continue reading “Ham Bone Soup”

Caesar Salad Asparagus

I love caesar salad! It’s one of my most favorite things in the world. I love the tangy dressing, the croutons and just the overall flavor. Lets be honest, this is a salad that can make you love salad.  This version is delicious because it takes crisp asparagus and tops it with some caesar goodness! This is a great side dish option or even as a meal itself! I went simple with this but you can absolutely top with some shredded parmesan for a little extra kick!

But if you love Caesar and want to get out of the rut, this is a way to liven it up!
