Chicken and Potatoes with Garlic Spinach Sauce

Chicken and potatoes are a classic mix and this dish takes it to another level. It’s easy to make and smells incredible! All you need is a baking dish and a skillet to make this and you will have a meal that is full of flavor. This is great with some salad and some Italian bread on the side to soak up all that extra yummy sauce! 

Ingredients: 

4 bone-in chicken thighs

Salt and pepper

1/2 tablespoon oregano

1/2 tablespoon basil

3 tablespoons butter

2 cups spinach, chopped

6-8 red potatoes, scrubbed and quartered

Garlic Spinach Sauce

1/4 cup butter

4 cloves garlic, chopped

2 tablespoons flour

1 cup chicken broth

1 teaspoon thyme

1 teaspoon basil

1/2 cup whole milk

1/2 cup grated Parmesan

Salt and pepper

Chicken and Potatoes with Garlic Spinach Sauce

Instructions: 

1) Preheat oven to 400 degrees. Coat baking dish with nonstick spray.

2) Season chicken with salt, pepper, oregano and basil.

3) Melt butter in large skillet over medium-high heat. Add chicken, skin side down and sear both sides for about 3 minutes. Set aside.

4) Lower heat to medium heat. Melt 1 tablespoon butter in skillet. Stir in spinach and cook till wilted and set aside with chicken.

5) Prepare the sauce by melting butter in skillet and add garlic. Stir and cook for about 2 minutes. Whisk in flour and stir for another minute.

6) Whisk in broth and add thyme and basil. Cook and whisk for 2 minutes. Add milk and parmesan. Stir until thickened.

7) Add potatoes, chicken and spinach to baking dish and pour sauce on top. Stir and bake for 30 minutes until chicken reaches 165 degrees.
