Weekends are my time. Monday through Friday my mornings are rushed and frantic trying to get out the door. Weekend mornings I try to have nothing planned and try to relax and be lazy. I get some stuff down around the house, I drink some coffee, maybe watch some Bob’s Burgers, just take it easy. A lazy morning deserves an easy breakfast. My husband buys bacon in bulk so we thaw out a package and fry up the whole thing. Then we put it away for whenever we need it.
Having bacon ready to go made this sandwich so easy. It was literally done in less than 5 minutes. If you don’t have bacon ready to use, you can throw a few pieces in the microwave quickly.
Ingredients:
2 slices bread
2 slices cheese
3-4 slices bacon
1 egg
1 tablespoon butter
Instructions:
1) Put the bread slices into the toaster and crack the egg into a small shallow bowl. Use a splash of milk if you prefer and scramble. Microwave for one minute.
2) Take one toasted slice and layer with cheese, bacon and top with the egg. Season with salt and pepper.
3) Take the other bread slice, spread some butter and top the sandwich. Cut in half and enjoy.
