Smothered Chicken Burritos

Who doesn’t love burritos? They are really just the most amazing food ever! Not only are these Smothered Chicken Burritos filled with awesome deliciousness, they are also topped with an amazing Cajun cheese sauce! Now this recipe involves some prep with the crockpot so you need to plan for this. You can make the chicken the night before or the morning of but you have to plan a few hours ahead for this one. I promise you though that it’s worth it! 

Ingredients:

Chicken

3 large chicken breasts

1 tablespoon olive oil

1/2 salsa

2 tablespoons brown sugar

2 tablespoons chili powder

1 can Rotal Diced Tomatoes and Green Chilies

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper

1 teaspoon liquid smoke

Burritos

Large Tortillas

1 Green Pepper, julienned

1 Yellow Pepper, julienned

Shredded cheddar

Olive Oil

Avocado/Diced Grape Tomatoes (optional)

Cajun Cheese Sauce

2 tablespoons butter

1 tablespoon flour

1.5 cups milk

Salt and pepper

1/2 cup shredded cheddar cheese

3 tablespoons cajun seasoning

Instructions: 

1) Place the chicken ingredients in crockpot, mix and cook 2-4 hours on high or 5-7 on low. Remove and spread chicken. Set aside till ready to use. If needed, microwave to make nice and hot again.

2) When ready, pour some olive oil in a skillet and heat to medium-high. Add peppers and cook for a few minutes till softened. Set aside in a bowl and wipe out skillet, place back on stove.

3) Prepare cheese sauce. Melt butter in saucepan over medium heat. Once melted, add flour and whisk till combined. Reduce heat till low and add milk. Whisk well and add salt and pepper. Bring to a simmer and stir till thickened, about 3 minutes. Remove from heat, add cheese and mix well. Add cajun seasoning and mix again.

4) Pour 1 tablespoon in skillet and heat to medium while you assemble the burritos. Add chicken, some peppers, some cheddar and roll up burrito style. Place into the skillet seam side down and cook on all sides till browned. Top off with cheese sauce and any additional toppings and serve.
