I was making dinner this weekend and I could smell it in the air. That sharp crispness that only autumn air has. Which means that this really is the end of summer. While I do love summer, I’m looking forward to the cooler nights and the beautiful foliage. But you don’t need to let go of summer just yet, you can put together a delicious Summer Berry Pie to see goodbye in the most delicious way possible.
Ingredients:
Crust
1 cup flour
1 teaspoon salt
6 tablespoons cold butter
4 tablespoons ice cold water
Filling
1 pound strawberries, hulled and halved
1 pound blueberries
3/4 cup sugar
3 tablespoons cornstarch
Topping
3/4 cup sugar
3/4 cup flour
6 tablespoons butter, another 2 separate
1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
Instructions:
1) Preheat oven to 400 degrees. Mix topping ingredients in a bowl and set aside.
2) To make crust, mix flour and salt in a bowl. Cut in butter until mixture becomes crumbly. Add water and combine again. Place on a floured surface and roll out flat. Place into a pie dish.
3) Mix filling ingredients and make sure cornstarch is coating the berries well. Pour mix into pie crust. Sprinkle top of pie with topping mixture. Cut the last two tablespoons of butter and dot the top of the pie.
4) Bake for 15 minutes, then reduce heat to 375 degrees. Bake for another 45 minutes, until bubbly and crust is browned. Remove to a wire rack and cool completely before serving.
