It’s December which means cold weather and craving foods that let you feel warm inside. Tomato Basil Soup is a perfect thing to eat and then snuggle under a warm blanket. This is full of flavor and nice and thick so you can dip in some crusty bread to make it even more delicious! I had a nice big bowl of this and it was the perfect ending to a cold day and made me want to curl up with a blanket and book. Get this ready for the next snow day to make everyone happy!
Ingredients:
2 tablespoons butter
1/4 white onion, finely chopped
2 cloves garlic, chopped
1.5 tablespoons tomato paste
1 28 oz can diced tomatoes
1 cup chicken stock
3 tablespoons brown sugar
1/2 teaspoon basil
Salt and pepper
1/2 cup whole milk
Instructions:
1) In a medium saucepan, heat butter on medium low heat. Once melted, add onion and cook till soft, about 7-8 minutes. Add garlic and cook for another minute.
2) Stir in tomato paste and cook for another 5 minutes.
3) Add tomatoes, chicken stock, brown sugar, basil, salt and pepper. Lower heat to simmer and cook for 20 minutes, stirring occasionally.
4) Transfer to blender and puree till smooth. Pour back into the saucepan and add milk. Garnish with cheddar cheese if desired and serve.
