The holiday season means lots of time together with loved ones. With all the holiday dinners and parties, you catch up with everyone over delicious foods. This recipe for Apple Cranberry Stuffed Cornish Game Hens is perfect for an intimate Christmas dinner with loved ones. Cranberries are very festive for Christmas and Tyson® Cornish Game Hens can be picked up right at Walmart! Don’t forget to finish up with some dessert, like some amazing Sara Lee® Pumpkin Pie!
The holidays can be a hectic time and this recipe is the perfect thing to make when you don’t have time to really watch an oven. The stuffing comes together perfectly and while you are eating, you can place your Sara Lee® Pie! The perfect end to a perfect meal!
I used fresh cranberries for this but if you have trouble finding them, you can substitute the dried ones. I bought the double pack of Cornish Game Hens right in the frozen poultry aisle at Walmart. Make sure they are fully thawed before preparing. Then I ran to the next aisle over and picked a Sara Lee® Pumpkin Pie which was with the other frozen desserts.
Ingredients:
2 Tyson® Cornish Hens
1 small apple, chopped
1/2 fresh cranberries
1 tablespoon chopped rosemary
2 cloves garlic, chopped
1 tablespoon olive oil
3 tablespoons butter
Salt and pepper
Instructions:
1) Preheat oven to 425 degrees F. Rinse hens inside and out and pat dry.
2) Mix apples, cranberries, rosemary and garlic in bowl and spoon into the hens cavities. Place into a cast iron skillet or baking dish.
3) Season with salt and pepper. Drizzle the olive oil over the top of the birds. Place pieces of butter all over the birds.
4) Place skillet into oven and bake for 1 hour until golden brown. Remove from oven and serve.
