Now that summer is winding down I’ve been opening up my windows more and the one unintended perk was that my bananas ripened super quick! I noticed that they were brown and ripe and knew I had to use them quick! So I browsed Pinterest and found this recipe from Chef in Training. I opted out of one step but these still came out sweet, delicious and of course chocolately! I love potatoes! It’s true, I really do. I don’t know if it’s my Irish blood or the fact that they are such a versatile side dish, you can do a million different things with them. This recipe is great because it’s very easy but the potatoes come out so flavorful and crispy. I recommend these for anything. To say these were a success is an understatement! From the first bite, it’s love. The marinade just added the perfect amount of pop to the meat and veggies and they are truly something that will make you want seconds. The veggies cooked up nice and crisp, not soggy. No joke, my husband was yelling at me to hurry up and get my photos so he could have seconds. Like standing behind me with every click, “Are you done? I was asked recently to try out the new GoApe course that opened in New Britain, CT. If you are unfamiliar with GoApe, it’s an outdoor adventure in the trees. You go through obstacles up in the air, swing on Tarzan swings and fly down zip lines. There are parks all over the east coast and what makes them great is that they care about the environment.
