This is such a great side dish because it is easy and quick! It can go in the oven while you are finishing up the main course and serve them right out of the oven.
Winter has finally left us and in it’s place things are blooming all over. The downside to that blooming? Allergies. For those not familiar with the Liebster, it’s basically a pat on the back from fellow bloggers. It is a great way to share the love with other blogs that you are a fan of and want to spread the word about. Since I accept my nomination, I’m going to now live up to my duties, which are:

Why did you start to blog? I always enjoyed writing and wanted a place to write freely.
Who do you admire most in your life? Strong women who do things that aren’t expected of them.
What is your favorite movie or Broadway show? I love The Big Lebowski, I can watch it a million times and laugh every single time.
What/Who makes you smile everyday? My son, he’s at the age where his personality is really coming out and it’s pretty entertaining.
What is your favorite food? Pizza, I can eat it all day long and never get tired of it.
Where is your favorite place to travel? I haven’t traveled as much as I would like but I love going to South Carolina to visit my family. I always have a great time there.
Mac or PC? I love my Mac, I use a PC at my office job and it drives me crazy!
What/Who is your daily inspiration? Being a good wife and mother, everything else doesn’t matter in the end.
Summer or Winter? Summer, summer, summer!!! Winter can go far away and never come back!
What is your favorite “me” time activity? Sitting outside on a beautiful day and reading a book.
If you could learn another language, what would it be? Polish, my heritage is Irish and Polish so I would love to be able to speak the language. Nobody is my family who spoke it is around anymore.
For anyone who has been here before knows, I love nail polish and beauty products. The big problem is finding the time to really play around with colors and brands like I used to. I found a great website, Julep, that gives tons of great options that can be sent right to your door! They also have a beauty blog right on their site with how-to’s and tips for all things beauty! I highly recommend checking them out, they write about everything from an appreciation to Jackie O (seriously, a style queen) to tips on how to store your nail polish collection.
Last nights episode of How I Met Your Mother finally, FINALLY, had Robin and Barney’s wedding. I have to say I will miss this show when it ends next week, it has grown on me a lot over the years. It’s really turned into a thought-provoking show sometimes and this last season has just piled on the contemplative thinking. From last weeks truth about growing out of the friends you have in your youth to this week. There was a part in particular that really stood out to me-wedding vows. Barney had trouble writing honest vows that didn’t make him sound like a complete cretin and Marshall and Lily discovered that really keeping to your wedding vows is harder than it seems, which brought me to this thought:

Life with a two year old has its ups and downs. They become more independent, which is both a blessing and a curse depending on how you look at it. They are more verbal and can tell you what they want easier-again, blessing and a curse. But the appetite of a toddler is a fight you need a will of steel to win.
