Three Cheese Potatoes Au Gratin

Vegetarian

Sometimes when you think of a recipe, the name makes it sound like it could be harder than it is. These Three Cheese Potatoes Au Gratin take a little bit of prep but are so delicious and decadent that you won’t even care. The cheese sauce coats the potatoes perfectly, making them nice and tender. You can use any cheese you would like but I would recommend a sharp cheddar to complement it or some Jack cheddar to give it an awesome spicy flavor!  Continue reading “Three Cheese Potatoes Au Gratin”

Chicken Sausage and Roasted Veggies

The newest thing at our house is chicken sausage. It’s delicious and full of flavor but not a lot of fat like regular sausage does. I love using Al Fresco brand just because they have a ton of different options but you can use any kind that you like. What I really loved about this recipe was that it’s great for meal planning. You can make a whole batch worth on the weekend and have lunch for every day of the week! This reheats well and doesn’t lose any flavor as a leftover so definitely add this to your meal plan menu!  Continue reading “Chicken Sausage and Roasted Veggies”

Skillet Tuna Penne

My husband is a huge tuna fan so it’s a staple on my shopping list. He usually just throws it together and makes a quick dish but I wanted to add a little something extra. This Skillet Tuna Penne is a creamy, easy dish that is a great change of pace from regular tuna casserole, and it smells amazing! However, if you want to go the classic route, you can find a recipe for Tuna Casserole hereContinue reading “Skillet Tuna Penne”

Skinny Fettuccine Alfredo

Ever since I was a kid, a big bowl of Fettuccine Alfredo was something I always loved. It was the ultimate comfort food. But it is not the healthiest thing to chow down on. This version still has a ton of flavor but doesn’t have the heavy cream to add on the calories and fat. I left the milk option open ended because it’s up to you on how many calories you want to cut, however I would recommend you not use skim. You have to have a little bit of fat to make the sauce nice and rich. Heavy cream is about 30% fat so even switching to whole milk would cut down on your calorie count without taking away the sauce we all love.  Continue reading “Skinny Fettuccine Alfredo”
